I have been baking professionally for over 47 years. I was fortunate enough to have gone to The California Culinary Academy when Bo Friberg was the Baking and Pastry chef instructor. My family founded Boboli, Inc in 1982 and I was the original formulator of the Boboli prebaked cheese crust. Our company was sold to Kraft/General Foods Corp. in 1986. After Boboli, I consulted with a company in England called British Bakeries during a time when they were developing value added bread products. I enjoyed meeting British executives, one of whom had a degree in history rather than just a degree in Business which I thought made him a much more well rounded person. As I got older, I enjoyed working in an artisan bread bakery in Sonoma, CA called Artisan Bakers. The owner, Craig Ponsford is legend in the artisan bread baking world. He was the team captain of the first gold medal winning team at the Coupe de Monde..the world cup of bread baking in France. I moved to Seattle in 2001 and worked in a bread bakery here when I discoved that I had developed a serious allergy to bread flour..breathing it..not eating it.. In 2003, I was faced with a career changing event..an allergy to the thing I knew best, bread baking. In early 2004, I began taking sugar paste flower classes in Canada at a culinary school in Vancouver, BC and soon became keenly interested in wedding cakes. I went to the Wilton School in Chicago, Illinois and took the Master Course in Cake Decorating. I returned to the Wilton School on many occasions to take classes with Colette Peters and Nicholas Lodge both of whom are extraordinary teachers. In 2006, I opened my studio in Seattle, WA and I have been making wedding cakes ever since. I have also been teaching from the very beginning because there had to be a more serious approach to cake making than just the decorating part of it. I wanted to make cakes that tasted good. The original studio name was Sugar! cake studio but I changed the name to The Artisan Cake Guild in 2009 which suited the whole sense of this studio. I was creating a guild. Cake making is an art form..I love to make cakes and above all, I love the whole process of making the sugar paste flowers.
