Hi there, I'm Kim and I hope you enjoy reading my blog! I am a junior in a coordinated dietetics program in Buffalo, NY. The end goal of my program is to become a Registered Dietitian. A Registered Dietitian is better known to the public as a nutritionist, but an RD is the most qualified "nutritionist" that you can be. To be called an RD, we need to complete the following: A bachelor’s degree at a US regionally accredited university or college, a CADE-accredited 6-12 month supervised practice program (internship), & pass a national examination administered by the Commission on Dietetic Registration (CDR). After completing the test, you become an "RD" and continuing professional education credits are required throughout your career to maintain registration. As a dietetics student we learn that there is a lot of false nutrition information out there based on poorly done studies and insufficient evidence. The sad part is that this information with lack of scientific support can be plastered all over the internet for anyone to see and believe. Unfortunately, this can result in crazy fad-diets and an overall misinformed public. The main purpose of this blog is to dispel some of these myths through nutrition tips to use in your daily life along with some simple healthy recipes that I enjoy! I titled it "apple butter harmony" to symbolize the value of moderation in a healthy diet. An apple alone could be categorized as "healthy" and butter alone could be categorized as "unhealthy", but the two words together make a delicious fall snack to spread on toast! What is symbolized here is the importance of not seeing foods as "good" or "bad." Lets be honest, we are all going to have a cookie every once in a while (or for me, a Reese's Peanut Butter Cup), it's the moderation that's the key!
